We only Store your basic Guild Informations that contains: Guild ID, Owner Id, Guild Icon, Guild Description, Guild Member Count, Guild Created Timestamp. We also stores Channel IDs( For /channelonly command) and Role ids for (/requiredrole command) and Whitelisted User IDs. These informations are stored as long as the bot is in the server , as long as you use /channelonly or /requiredrole and as long as you’re whitelisted.
